"Hi there, and welcome to my cookbook. I'm so happy to have you along with me for a vegan exploration of Middle Eastern food. Aside from the basics, such as hummus and falafel, there aren't many places where you can find traditional Middle Eastern dishes made vegan, so this book was a dive into the unknown. It turned out to be far more enjoyable and doable than I could've expected, and I'm absolutely delighted that I get to share it with you!
I first started @leeksbeets when my husband became a vegan. It was a way to chronicle my attempts to create wholesome, delicious, plant-based meals. I didn't think vegan food could be versatile or particularly tasty, but quickly learned I was wrong. Within six months, I adopted a plant-based diet myself. At first, I considered Middle Eastern cuisine to be intrinsically opposed to a vegan lifestyle, but | soon discovered that was also a misconception.
I'm Egyptian, but I grew up in Saudi Arabia, where I was fortunate enough to attend international schools that had students from all corners of the Middle East. My exposure to Middle Eastern ingredients was vast. This came in handy because I realized that many of the flavors of Middle Eastern cuisine came from plant-based sources. From there, I devoted much of my time in the kitchen to crafting vegan versions of Middle Eastern classics and to creating recipes of my own using Middle Eastern flavors. I'm so excited for you to try them!
I've found that almost any Middle Eastern recipe can be veganized by using the right spices and making the correct swaps. It might seem overwhelming initially, but I'm here to walk you through it and show you how simple it can be. Whether you're just beginning, new to veganism or Middle Eastern food, or an expert in one or both, I hope you'll find new recipes here to try and love!"
