”In this book I've tried to present, in a form easily followed by the creative home cook, all the recipes that were most popular at my mother's restaurant through the years. And each recipe was tested by my wife, May, and me.
Since I was accustomed to cooking for from four thousand to six thousand people every day, reducing these restaurant recipes to quantities suitable for four to six servings presented quite a chore.
Although difficult, I assure you it was a great pleasure, especially with May at my side still helping me after thirty-nine years of marriage.
It is always a joy to recommend the food and the wine that I have found most enjoyable and delicious throughout my many years in the restaurant. However I would like to point out that there is one and only one reason for my recommendations, and that is merit-merit based on taste, quality and enjoyment.”
